  Here at the 1912 you will not find Signature dishes, I usually renew my recipes each season. Over the years, I have travelled to several regions and countries, countries, cultures where the culinary approach was different where the products were different.
The scallops of Toyoura in Japan for example have not the same flavor or texture as that of Trouville fished in the bay of the Seine. Here at 1912, you will not find Kobe beef or Gamberoni from Genoa but indeed Norman lamb and langoustines from here. "The kilometers, it's me who does them, not the products" Only a few products that have no equivalence in Normandy have opened the door of my kitchen. My journey of gastronomical initiation enabled me to discover another side to my cooking, rare herbs and peppers…. From years to years, my collection is growing. Today more than 80 species of aromatics decorate my greenhouses and already 30 varieties of true and false pepper trees accompany my products daily... So why pepper? This is by far the product that touches me the most. I as discovered it by preparing a menu with winter flavors. At that time of year, plants are scarce. So for a chef who takes advantage of their flavors i had to find an alternative product. That is how I discovered the many virtues of pepper. It evolves according to its soil, and its maturity. Like the four seasons, it goes from green for spring, red in summer, orange in autumn to finish sometimes black or white like winter.
Such is a story of nature and humankind such makes my profession the most sincere. J. THYRIOT
